A delicious dinner, baking in the oven, while spending time together.
1 oven bag
1-2 Cornish Hen or Chicken (whole or parts)
Extra Virgin Olive Oil and Sesame Oil
Thai spice, Coriander, Rosemarie, Thyme, Orageno, Pepper, Garlic Salt and Paprika
Potatoes, Carrot, Onions and Fresh Garlic
Optional: Wild Rice and Mushrooms
1 Butternut Squash
Total prep time is about 15-20 minutes (max). Total baking time is approx. 1hour 15-25 minutes.
Chicken/Cornish Hen (at room temp) season with pepper and (garlic) salt; optionally stuff with wild rice and mushrooms.
While oven is pre-heating to 180-190 C (375F)
Cut in bite-size pieces:
1 large Onion
3-4 small Potatoes in cubes
Carrots in parts (small)
Garlic Cloves as liked
and place your ingredients in the oven bag, then
Add spices to your liking.
Add 2 table spoons of Olive Oil and drops of Sesame Oil to your liking (optional)
Shake all ingredients well in oven bag.
Cut Butternut Squash in half and season with some (Garlic) salt and Pepper and cover with a little Olive Oil.
Add your Cornish Hen/Chicken and surround with the veggies in the bag; make sure that bird is breast-side up.
Seal bag while leaving enough room for the bag to expand in the heat of the oven.
Place bag in baking pan in pre-heated oven, while keeping an area available in the pan for the Butternut Squash.
Bake initially for 40 minutes at 360.
After 40 minutes, add squash in the oven pan and bake all for another 40-50 minutes at 375F.
Around the last 3-5 minutes, drizzle honey over the squash; check squash to make sure it is done to your liking.
When done, place on a nice serving platter and Voilà... a lovely meal.
Serving suggestions: good with Snow Peas, French Beans or any vegetable of your liking.
