Italian food is world renowned for its rich diversity and variety of dishes for all occasions. However, the secret behind truly great Italian food is using the freshest ingredients when preparing your meal. Bring a little bit of Italy into your own kitchen with Cintabra’s Eggplant recipe; it is palatable and easy to prepare.
2 packages of Provolone or preferred cheese (20 slices)
Spices: Oregano, Rosemary, Fresh Garlic, Cajun Spice (optional), Thyme
Extra Virgin Olive Oil
Crushed tomatoes with basil
Wash and scrub eggplant
Slice ¾ inch
Dry slices with paper towel
Coat slices in corn flower
Heat oil in large frying pan
Gently fry slices on both sides (1-1 ½ minutes each side)
Pre-heat oven to 370F. Place fried slices in large glass oven proof dish, then layer tomatoes on top of slices and add spices Orageno, Rosemary Fresh Garlic and some Thyme. Cover with cheese slices and repeat same for the next layers.
Place in oven, time depending on your liking of the texture of the eggplant, 45-55 minutes.
